Loin Chops with Lemon, Honey & Thyme Marinade

This sweet and spicy lamb chop recipe couldn’t be easier.

Ingredients

1/2 cup honey

1/2 cup fresh lemon juice

1/4 cup extra-virgin olive oil

3 tbsp fresh thyme leaves

1 tbsp Dijon mustard

1/2 tsp sea salt

1/2 tsp crushed red pepper flakes

4 American Lamb chops (loin, rib, sirloin or shoulder)

Directions

1In a small saucepan, combine the honey, lemon juice, olive oil, thyme, mustard, salt, and pepper flakes. Over medium heat, bring the liquid to a slight simmer. Remove the pan from the heat immediately. Let cool and set aside 1/4 of the marinade for later use.

2Pierce the lamb chops with a fork several times on all sides. Place the chops in a plastic food storage bag and coat with the marinade. Marinate in the refrigerator for at least 4 hours or overnight. Remove the chops 30 minutes before cooking, discarding the remaining marinade.

3The cook times will vary depending on the thickness of the chops. For 1-inch chops, broil or grill chops over medium heat for approximately 4 to 6 minutes per side or until desired doneness. Alternatively, pan-fry the chops and then transfer them to a baking sheet and finish cooking them in a 400°F oven until desired doneness.

4Brush the chops with the warmed reserved marinade before serving.
